Food processing machinery - Pizza dough sheeter machines - Safety and hygiene requirements

Abstract

This European standard specifies safety and hygiene requirements for the design and manufacture of pizza dough sheeters. This document deals with all significant hazards, hazardous situations and events relevant to pizza dough sheeters when they are used as intended and under conditions of misuse which are reasonably foreseeable by the manufacturer. This document deals with the hazards which can arise during commissioning, operation, cleaning, use, maintenance and decommissioning of the machine. Machines covered by this European Standard are used, for example, in shops and craft activities (bakeries, pizza restaurants, catering facilities, pasta shop etc.) for flattening and enlarging pieces of dough for producing mainly pizza.
